Our story

A new chapter on Gay Street

We've spent our lives in hospitality, and The Beagle is the place we've always wanted to open ourselves: a restaurant with real character, run by people you'll actually meet, in a Grade II listed Georgian building we love.

Nobody said getting a commercial kitchen into a listed building in a World Heritage city would be easy, and it wasn't. The plans have been torn up more than once. We're sharing the whole journey as we build: the highs, the lows and the dust. Andrew breaks things. Lindsay fixes them.

A first look

The rooms, taking shape

Early concept visuals of 35 Gay Street: sage green panelling, leather banquettes, and a wall or two of hounds and horses. The brief for the feel of the place is simple. Welcoming, friendly, and easy to lose a couple of hours in.

From the kitchen

Pudding first, obviously

The menu is still being argued over, but two things are already non negotiable: a pear tatin (better than apple, if you can believe it) and the rice pudding made to Lindsay's mum's recipe. There is a certain fondness for milk puddings in this partnership. More on that soon.
